Yeah, I'll go buy the 40 dollars of gelatin, xanthan gum, lecithin, and rendered duck fat to get something I basically get for free (butter, flour and some broth) when i actually roast a chicken/duck/turkey.

I work in a book store and it's pretty awesome seeing all the retards coming in looking for this modernist cuisine book (it was apparently all over NPR, Oprah, and other shit) only to find out that, it's so bleeding-edge hipster that it's 5.

Yes folks...they put out a cookbook that cost 5.

Oh, but for those of you disgusting, uneducated poors who think that a SUPERMARKET is where to get stuff to cook food on your PATHETIC commoner-level stoves, they did bless you the ability to buy a more simpler level book for your TV addled brains. Costing only a mere 0.

Actually, I should correct that. Modernist Cuisine isn't even a cookbook. It's just a book that engages in tons of mental masturbation about how people who cook with traditional ingredients are destroying all food as we know it, and if you pretend like you have some sort of understanding of the absolute, molecular-level goings on in what you eat and how to alter or improve it with chemicals or non-traditional ingredients, you can finally stop being a greasy hick.

It's basically Good Eats for people who care more about stroking their beard while they're cooking more than what the end result is.

You know every time this guy has guests over for dinner, he rattles off this sort of bullshit before he lets anyone actually have any food.

Can't you just picture him standing at the head of the table holding up the gravy boat and talking about water molecules while the guests grin vacantly and pretend to be impressed with his knowledge and skill so they can finally just eat?

"Foodies" are more excited by the process than the actual product.

I wanted to come to this video and rage when it was first posted, but I was certain there'd be a bunch of backlash. So glad to see all the hate for MC! A few things:

1. Claiming that roux detracts from the "pure flavor" of gravy is fucking ridiculous. It just adds complexity, especially if you make it with another fat like butter and make it nice and nutty and brown.

2. This gravy has no giblets (fry the everliving shit out of em along with some bacon, and then mince everything into oblivion to avoid those gross giant chunks of rubbery giblet) and is therefore bullshit.

3. I've worked with exactly one person who bought the 0 MC cookbook. He is enthusiastic and well-meaning, makes recipes that are sometimes okay, and is fucking worthless on the line.
