The thing that always bothers me about these kinds of people is the grand pronouncements they make about themselves that pretend with the least possible effort to be humble and agreeable. "We really care about making food as delicious and technically perfect as possible" has the same ring of bullshit reframing the conversation as when so-call rationalist talk about how they "believe in the scientific method and critical thinking." These guys just refuse to make or acknolwedge that there is a reasonable tradeoff between time and emotional investment in making food and how good it tastes. Many people know how to make a really good burger out of ground beef and spices, but are willing to just thaw out a frozen patty for a quicker, less good burger because it's just food and who cares?

I like modernist cuisine videos. Never tried any of the food, as there's no crazy space cuisine place in my country, and if there was it would probably be too expensive, but some of the stuff these people do seems quite interesting and I'm all for trying out something new.

Sure, the vast majority of these self-proclaimed modernist chefs seem like insufferable dorks, but who gives a shit, that's their problem, I sure wouldn't mind to at least TRY that crazy sous-vide crio-steak.

fuck you. It wouldn't bother me as much if they didn't try to say this is easy shit to do, or even economically feasible for the general population. Im not saying its bad in the overall schene of things (like say, utting gold leaf on food, which in my oppinion is like going to an orphanage to laugh) Cooking/eating like this is elitist as all fuck that's all there is to it.
