There is no difference in different colored eggs. Breeding plays a minor role in major corporate carton eggs. It's as simple as this:

Brown eggs generally come from brown chickens.
White eggs generally come from white chickens.

There are many, many hundreds of breeds of chicken. Some of the heritage breeds lay green or blue eggs, or mottled or speckled eggs that look to pretty to eat. You can get those at farmers' markets. Those kinds of backyard eggs will cost you -8 a dozen and they are fucking amazing. The yokes are often dark orange or sunset red and taste unlike any normal egg you've ever had. The reason is that chickens in their natural state eat lots of different things, especially bugs, and that will change the flavor and protein content of their egg.

Those a dozen eggs you get at Safeway come from chickens fed only one thing, and it's usually corn with some kind of protein meal added to it. Same color egg each time, same yolk, same flavor.

One day I'm gonna get me a chicken coop, but I live in an apartment. The only reason I know this stuff is because I worked for a company that did lots of sustainable urban farming projects, so I got to learn a lot about gardening and chickens.

We had chickens on our ranch in California and my ex-mother in law got the bright idea of letting them "free range". Besides getting eating by coyotes on a regular basis, the fuckers also developed a taste for the little scorpions that were found all over the place and refused to eat their feed. We learned real quick what a difference diet makes in the taste of eggs.
