I hate olives, but I still found this interesting. I'm glad to see that so much is still done by hand outside of that 900 olives a minute pitting machine.
FYI my first job involved high end olives and they also come in cans or plastic barrels. They're just bigger cans that someone (high school me) opens up in the back room before you see them.
