I would like to read a scholarly breakdown of this by a panel of scientific experts.

Heres my best theory atm...

So, the pepperoni gets heated more on one side, which causes it to curl up (not sure which side gets hotter, I would guess the top side as the pizza would act as a heat sink to the bottom side, but in that case the hotter side *shrinks*.. and hot things are supposed to expand, but maybe its something to do with the specific structure of pepperoni, like maybe the fat blobs in it melt and run away causing it to contract when it heats)

Anyway it wants to curl up.
Normally, because of random variations in a pepperoni slices shape, structure, and underlying pizza material, the curl force will happen to be greatest in one particular axis, and they will curl up along that axis.... but in the case of this particular piece of pepperoni the direction it wants to curl up happens to be perfectly balanced.. The curling up force is the same in every orientation so it starts curling in one direction and then the curl rotates to a nearby orientation and the wave of curl orientation change just keeps going around.

I thought it was just a convection oven whose fan is right over it.. But that's an interesting theory as well

Yeah, that works with my theory, the fan would help.. It defo looks to me like the salami is not actually rotating.
So same as above but the fan provides energy to move the curl axis wave around.

It’s ham/Canadian bacon, this your whole pepperoni-based hypothesis is null.

It’s just steam at the meat/cheese interface.

Anyway I've never seen or heard of salami/ham curling up in an over. Good pepperoni will turn into a little bowl shape because of the casing shrinking.

Processed meat isn't going to expand as it heats, it loses moisture and contracts.

OZ is right about the casing, I think this has to do with vapor venting from it. That's my theory, which is mine (cough).
