This sort of fight has one purpose, to demonstrate what an utter badass the protagonist is. Sort of like in "Crouching Tiger Hidden Dragon" where Jet Lee kicks the ass of a ninja wielding the strongest sword in the world with a stick. "You come at me with any weapon you like and I will kick your ass with my paper fan." That is true badassery.
