There is actually a body of surviving literature from the 15th and 16th century on the subject of.... European combat techniques. It's a valid and interesting albeit geeky area for historical study. I'm not saying it's a valid foundation for glasseye's LARP club or any form of physical recreation, mind you, just that when WMA nerds talk about their shit dating back to what the OLD SCHOOL KNIGHTS AND SHIT DID they're just making a distorted and inaccurate claim, not one completely pulled out of their ass.

There are earlier pieces, such as the I.33 manuscript from ~1280.

There are many text descriptions of a knight's training that we can extrapolate from, but it is true that they lack authority for the actual forms of combat. We patch together what we know from a wide variety of sources, and try to minimize extrapolation as much as possible.

Dammit! This is worse than the kendo versus sabre fencing. At least those two were both sports and they must have agreed on some set of rules the two shared.

This has got to be a D&D guy who graduated to SCA who got got into an argument with his kendo practicing buddy about whether the samurai or medieval knight was better and decided to settle it amongst themselves. This reeks of Star Wars vs Star Trek vs Babylon 5 nerdom.
