People, people. The real issue here isn't the force feeding, or the cages, or the fact that it's French. It's the fact that foie gras is about as edible as turpentine and marbles. Maybe it's just that my palate isn't refined enough to appreciate the subtle complexities of thirty dollar a pound squishy Gallic bird liver, but I can't say my life would change all that much if foie gras ceased to be produced.

Now caviar and Dodo eggs, that's a different story!

Foie gras is extremely difficult to work with. The outside of the liver is covered with a thin, bitter membrane. That has to be completely removed. Throughout the liver there is a network of veins, if they are not removed the foie will taste bitter and, well, full of gross veins. Foie gras is very easily overcooked. Overcooking it can make it taste mealy, bland, and if over-seared (burned, very easy to do), you guessed it, bitter. It is extremely difficult to prepare and to work with. This is one of the reasons chefs and cooks like to work with it (aside from the fact that it tastes so very fucking delicious). It instantly separates unskilled newbie hacks from pros.

If you tried it and didn't like it, it is probable that you just had a bad cook that night.
