A lot of it comes as sort of commission for getting women to spend money at the guys' respective clubs. I've seen the documentary in full (thanks Netflix!) and there was one scene where hosts were trying to get their dates to one-up each other into who could buy and shotgun the most expensive bottles of champagne... some of the girls would spend thousands of dollars in a night.

One of the more sobering realizations was that a lot of the girls making use of these guys are themselves prostitutes, so part of it's a weird and depressing ouroboros of sex workers and escorts.

You get the impression that these guys are emotional surrogates for women who work as physical surrogates.

And that all of them are drinking themselves to death, and slowly destroying any capacity to have relationships with other human beings.

To be fair, a lot of those women are hostesses, which is still a notch above outright prostitution. They're probably have a lot more paid sex with their client then their male equivalents, though.

You can't judge them until you've seen the whole video. You'd be thinking a lot differently of them if you saw it. It's fascinating.
