True story: I used to work downstairs from this famous food director. One day, they spent hours and thousands on this really great looking sandwich. They then simply placed it in the fridge, and started setting up the shot. Later on, they learned a valuable lesson in labeling props, someone else learned the consequences of ingesting paint and fixative and the rest of the crap they use to glitz up those props. Overall, it was a very informative day.

My wife actually has been on a couple of food shoots for a regional fast food chain.

It is exactly like this. Any time you see milk, that is actually Elmer's Glue. I forget exactly what they used to make the milkshakes, but it was something along the lines of papier mache and rice pudding.

Yeah. I dunno, I think the production side of things is genuinely interesting. There's no way that food ever looks that good in real life (especially the stuff my wife worked on, which were fucking sliders) and making a goddamned greasy-ass slider look palatable is a fucking black art.

In Screenwipe, Charlie Brooker revealed a couple of these tricks. For steaming slices of pie, they would soak a tampon, microwave it and hide it behind the plate. In shot, it looks as if the pie has just come out of the oven. And there's supposedly one Japanese guy who has gotten really rich by setting up a whole bunch of "cheese pulls" for pizza adverts like this. Different brands of gum have strict guidelines defining exactly how their gum is to be chewed on screen, really fucking weird stuff like that. Worth looking up.
