that double-jointed middle finger is "palming" the coin (this is why it has to be a large coin)

Actually, the first palm is between the fleshy part of the base of the thumb and the palm. He then transfers it to the fingers during the sweep/pass so that he can then show you the empty palm. (This is when you can see the coin under his middle finger.)
