It's staged insofar as the restaurant is closed to the public and the other "guests" are hired actors. But it is real insofar as the restaurant has to serve the the actors and Ramsey as normal guests.

They may act up a bit for the cameras, but the patrons are not actors in the traditional sense. You do have to make "reservations", but you don't know what you're in for and you have to pay for your meal.

i used to work at a soul food restaurant. i was the only not-black person who worked there; i worked there as a dishwasher, janitor and prep cook.

the place had good food, but it was slightly too expensive for the average patron in the year 2008; the place closed down within 6 months of its opening. near the end, the owner (a morbidly obese black man who prepared the meats) and his wife (a slightly less obese woman of color who prepared the sides) had a loud argument in front of a bunch of patrons on a lucky busy weekend. i saw a lot of weird looks from customers, but i tell ya, nothing scares off patrons like loud arguing; more than half of the people waiting in line for their food just up and left in 2 minutes.

a month later i got laid off when the place went under, and two months after that i heard of their divorce :(

TL;DR: anger is pretty unappetizing

So, apparently, this place has been known for this shit for some time now, with the owners being infamous as local crackpots or something; how the business stays afloat I don't know, but from what I've read here and there, my guess is that most of this show was partially staged, in so much as apparently there's no way that many people would have been present in the business without being paid to go or asked to go or something. Their facebook meltdown (that giygus posted above) is apparently only the latest in a series of weird online meltdowns this woman has done on places like Yelp and Urban Spoon.

The show's producers provide the customers for the before and after dinner services. I won't say that the customers' responses are scripted, but the customers do know what is expected of them when speaking on camera.

My ex lives a few blocks from this place and says that this lovely couple has quite the local reputation for being uunpleasant nutcases.

Speaking as someone who has seen several episodes of this show, I can safely say that you have to be crazy beyond all hope for the Kitchen Nightmares crew to ditch you.

Also, holy shit the Facebook drama and the Yelp reviews. Wow. Its like a bottomless pit of trainwreck business surrealism.

I meant Yelp comments. In a sampling, I found out customers have witnessed Amy literally slapping employees in the face, one of whom was asking why her hours were cut.

How desperate must these poor girls be to work for this shitstain operation? If the economy weren't hurting so badly these people would quit after the first week. Hell, the first day. My God, I feel sorry for anyone who has worked there.

I have to admit, seeing how people react to this show has really been eye opening. When I watched it I was like, oh, my family decided to open a restaurant while in disguise.
