There is so much lying in advertising that unboxing videos are regarded as a more direct representation of, well, what's in the box, and are especially useful as retail moves online where you can't pick the thing up and look at it before buying. They're just the YouTube equivalent of Amazon user reviews, for better and worse.

Babies watch unboxing videos for the same reason they like playing peek-a-boo or jack-in-the-box.
