I like what he says about taste towards the middle, and how the tongue of taste and the tongue of speech don't talk to each other. I used to work in the whisky industry in Scotland, and part of my job was tasting whiskies professionally and providing tasting notes (great gig). It was really difficult to come up with vocabulary to describe what I was tasting day after day; it was easier to describe the different emotions that certain flavors brought up.
