Why did they replace Curly with Shemp of all people? I mean Moe is the smart mean one. Shemp is simply a more rotten version of him. Why didn't they find another loveable doofus to round the group out?

Moe, Shemp, and Curly were brothers. Shemp came in due to Curly's failing health (among other things) but was actually a Stooge before Curly during their time with Ted Healy.

Because, Moe, Shemp, and Curly were brothers. Larry Fine was the outside in that sense.

After Shemp split they did have Curly Joe DeRita, who I developed sympathy for after watching the Stooges biopic, and also because he was in the Scooby Doo episodes.
