Today I have witnessed the second coming of Escoffier. Nothing I have ever cooked or will ever cook professionally will surpass this. I can only travel to Weber State University and throw myself at this man's feet, offering to be his stagiaire for the rest of my days, in the hope that I might absorb even 1% of his shining brilliance.
