I think most of the foods like this started off as poor people food.

Starving people scrounged it up because they had no means of getting other food and they figured out how to prepare it so it wouldn't kill them when they ate it.

Then assholes decided if it could be made edible, it had value, so they took even the disgusting dangerous glop away from the poor and started selling it as "exotic delicacies."

Except for ortolan bunting.

That looks more like something someone cooked up to make new pledges eat during Hell week. Or maybe for some medieval version of "Fear Factor."
